Finest Seafood Pasta

This is my favourite summer non-barbie recipe! I made it up myself, and during the summer I can’t get enough! Don’t be put off by the list of ingredients, a lot of it is stuff you’ve probably already got in your fridge or cupboard, and it’s dead easy to make! smile.gif And yes, it’s more blooming pasta…sorry…

1 cup cooked tiger prawns
1 cup cooked mixed seafood (mussels, crabmeat, squid, whatever you want!)
1 cup fresh tagliatelle or spaghetti
3/4 cup half fat creme fraiche/sour cream
about 10 cherry tomatoes, quartered
1 red onion, very finely chopped
6 mushrooms, finely chopped
2tbsp fresh chopped parsley
2-3 cloves garlic, depending on taste
1 green chilli, deseeded and finely chopped
1 tbsp lemon juice
1-2 cups fish stock
1-2 cups dry white wine
knob of butter
1/2 cup fresh grated parmesan cheese
salt and pepper

1. Melt the butter in a large pan, saute the onion and garlic gently for five minutes.

2. Add the parsley, chilli, mushrooms and tomatoes. Saute gently for 2 mins.

3. Add the stock, lemon and wine, bring to the boil. Simmer gently for about 45 mins until well reduced, stirring every five minutes or so.

4. Remove pan from heat, add creme fraiche plus the seafood and prawns. Add the cooked pasta and stir well. Reheat very gently if needed. Serve topped with the parmesan.

5. You need LOTS of white wine to drink with this, ha ha!! beerchug.gif

    Sounds like a great dish! Lou and I are looking for some recipes as we left all our cook books back at home and are relying on “old favourites”.

    I think I’ll just go through your blog and steal all your recipes đŸ˜€
