Lemon roast chicken

I’m making this for dinner tonight! 🙂 If you can’t be arsed making a stuffing, it’s a nice alternative and the flavours are good.

 1 large chicken

2 large lemons, quartered lengthways

olive oil

salt

Preheat oven to 180C. Stuff chicken with the lemon quarters. Tie back together. Pour a little olive oil over the skin of the chicken, and rub to coat the surface. Sprinkle salt on to taste.

Cook in oven for 105 minutes or until a skewer comes out clean, basting every half an hour.

I like to add whole baby potatoes after an hour- just keep rolling them when you baste- yummy! 🙂
